Quinoa Rice Pilaf: my new favorite staple.

I’ve been  playing around with this blend of quinoa and rice for the past few weeks…and I have to say that I LOVE it! The quinoa and rice cook really nicely together…the rice gets a little bit more of a nutty flavor and the quinoa gets a little more fluffiness. Best of all…it’s great for a quick meal when you just want some veggies and rice, but don’t feel or have time to add a protein source like a dal, lentils, tofu, etc….the quinoa of course is packed with a punch (click here to learn what a nutritional powerhouse quinoa is).   It goes great with veggies, cooks quickly and tastes great the next for lunch as well :)!… I usually make a little extra so I have leftovers for the next day.
Tonight I made it with my favorite Goddess Greens and topped it with a little bit of herbed goat cheese….the pilaf and greens both took under 25 minutes to make…so a great meal for a weeknight dinner!

Quinoa Rice Pilaf

INGREDIENTS

  • 1 cup rice, washed
  • 1 cup quinoa, washed
  • 2 teaspoons salt
  • 2 teaspoons butter (ghee (clarified butter) or olive oil taste just as great)
  • 4 cups water
  • 2 springs fresh thyme
  • 1/2 teaspoon dried dill (or else 2 tablespoons fresh dill)
 COOKING DIRECTIONS
  1. Place all ingredients in a medium size pot and bring to a boil on medium high heat.
  2. Once the water is boiling, turn it down to low, cover and cook for 20 minutes.
  3. Let sit for 5 minutes and then serve with your favorite veggies.

  • You can use olive oil or balance and it tastes just as great.
