As we begin to get ready for the holidays, this Chai-Spiced Eggnog is a perfect holiday treat that you’ll want to sip on between NOW and the New Year’s. It’s vegan and GF, yet creamy, festive and delicious—I’ve made this for many gatherings and am happy to report friends have always been happily surprised when I told them it was vegan :)!

For me personally, I’m thankful for my sister being safe despite her being so far away this year, I’m uber grateful daily that God is watching over and blessing my family and friends, and I have deep gratitude for each of you…my readers, my customers, my friends—because of all of you, I get to do what I love to do…I can’t really say thank you enough!

- 3 cups almond milk unsweetened
- 4 oz. vanilla pudding (vegan)
- 1 tsp ginger powder
- 1 tsp cardamon
- ¾ tsp nutmeg
- ½ tsp cinnamon
- ¼ tsp ground black pepper
- Place all ingredients in blender, and blend for 2-3 minutes. Serve chilled. ENJOY!

I am so grateful for my hubby-to-be! Just when I had given up hope that true love exists, this lovely man saunters into my life! He’s my best friend’s brother, and I’ve known him for over 20 years. He’s been jokingly proposing to me for about a decade, and I finally agreed to go out on a date with him in January. 4 months later he proposed! How was this amazing man right under my nose my entire life?! So over-the-moon grateful that he never gave up on me. <3
