great on a HOT summer’s day….
It’s plum season! A friend of ours has a plum tree that gives, gives and gives more all summer long. Last weekend they dropped off a big bowl of SUPER ripe ones…so my husband, the AMAZING jam maker that he is made some plum jelly. For those of you like me that don’t know the ins and out of jellies and jams….jellies are more liquidy, while jams are a little bit more dense.
So now that we have a dozen jars of jelly :)….we shared a few with friends and then on the Fourth of July we experimented with different ways of using these jars of deliciousness….my favorite being Plum Jelly Lime Spritzer’s!
PLUM jelly LIME spritzer’s
INGREDIENTS
- 8 oz. lime flavored soda water
- 1 Tbsp plum jelly (see below for recipe)
- 1 lime wedge
- 2-3 mint leaves
DIRECTIONS for making
- Place all ingredients in glass and ENJOY!

PLUM JELLY
INGREDIENTS
- 6 cups plums, pitted and chopped
- 3 cups sugar (I cut this in half…not sure I cut the shelf life by doing this…but it just sounded like TOO much)
- 1 tablespoon lemon juice
- 1 (1 3/4 ounce) package dry pectin
DIRECTIONS

Combine plums, lemon juice, and pectin in a large sauce pot. Bring to a rolling boil over high heat, stirring constantly.

Add sugar; return to a rolling boil. Boil hard 1 minute, stirring constantly.

Pour hot into hot jars, leaving 1/4″ head space. Adjust caps.

Process 10 minutes in boiling water bath.
