Ricotta stuffed ASIAN PEARS.

YUM is about all I can say about this divine creation….not only is this a healthy, gluten free, low sugar,  super de-lish dessert option….but it’s something I would definitely serve as a side at brunch. Light in flavor, the creamy, delicately flavored ricotta tastes sensational with the the crisp, mouth watering bite of an asian pear….a delectable combination! They really taste as great as they look.

Ricotta stuffed ASIAN PEARS.

INGREDIENTS

  • 2 Asian Pears, washed and dry
  • 4 tablespoons ricotta
  • 1 1/2 tablespoons maple syrup or honey
  • 1/8 teaspoon of vanilla extract
  • pinch of season for the ricotta and to sprinkle on top

DIRECTIONS for cooking

  1. Cut pears in half and then with a spoon or dull knife scoop out the seeds and place each pear on a dessert plate.
  2. In a small bowl, combine ricotta, sweetener of choice, vanilla and pinch of cinnamon and stir well.
  3. Place one tablespoon of filling in the middle of each pear.
  4. Sprinkle each pear with a pinch of cinnamon.

VEGAN NOTES

  • Instead of the ricotta, try using a tofu cream cheese or grind a 1/4 cup of soaked cashews until they are nice and creamy (this version MAY require 1/2 teaspoon more of sweetener).

GLUTEN FREE NOTES

  • Totally gluten free!

YOGIC COOKING NOTES

  • It’s best not to make a habit of combining dairy with fruit. Therefore it might be best to try the soaked cashews version.
